Soapstone retains heat like no other stone. This heat retention characteristic allows the stove to continue to radiate heat long after the stove’s fire has burnt out.
Baking with soapstone is safe because the stone is nonporous. That leaves no place for bacteria to hide. Baking with soapstone is idea for commercial applications due to the very slow cooling cycle of soapstone. Even heat means consistent results and shorter baking times. This is especially true in conveyor applications. Largely, due to the cooling effect inherent in a conveyor design.
