Walls waive. Almost without exception the walls of a house are not flat, therefore the counter-top must be cut to match the back wall. This is called a scribe fit. If the counters are cut straight there will be gaps at the back of the counter that are either covered up with a back-splash. This is why a lot of granite shops recommend a 4 inch back-splash, or hopefully the tile will cover the gap. I say hopefully because it is left to chance and HOPE is all you have if the proper steps to scribe fit the counter are not taken.
There are two alternatives to doing it right with a scribed fit. You can caulk the gap. Or you can cut the counter into the drywall. Both are bad options.
There are shortcuts that competitors take to cut costs. If you use a tape measure to make kitchens countertops this is the result. If you make a template and take the times to create a scribed fit you are getting a professional job.
